AUGUST IS ALL ABOUT DARK BEER & CHOCOLATE!

Indulge in our delicious Dark Chocolate Fondant with Porter Ale Ice Cream and a James Squire Jack of Spades Porter featuring hints of chocolate & roasted coffee for the ultimate dessert experience! The chocolate and coffee flavors in the Porter matches chocolate flavors wonderfully, but they also provide a pleasant contrasting flavor that goes well with many other desserts. Such as vanilla ice cream, fruit tarts, cheesecake, panna cotta, and even pecan pie. The beer works just like strong coffee on the palate.

  

 

Ingredients

(8 serves)

  • 240g Caster Sugar
  • 200g Dark Chocolate
  • 50g Cocoa
  • 8 Eggs
  • 200g Plain Flour
  • 200g Unsalted Butter

 

How to make it

  1. Melt dark chocolate and butter together over double boiler and fold until glossy (Allow to cool slightly)
  2. Separate yolk from 4 eggs
  3. In stainless bowl add 4 whole eggs, 4 eggs yolks, caster sugar and whip into soft peaks
  4. When the melted chocolate has cooled, add to whipped egg and fold gently until colour is even
  5. Add sifted flour into chocolate mixture in 1/3rds
  6. Fold each 1/3rd of the flour through gently until incorporated taking care not to bang all of the air out of the eggs
  7. Fill moulds 2/3rds of the way up, leaving room for the fondant to grow
  8. Place moulds into preheated oven 200 degrees
