Match this malty-heavy, toffee-caramel finished, nutty craft beer with a rich, meaty dish for the ultimate food pairing.

Nine Tales Amber Ale was the original James Squire beer and some would argue the best. It is full bodied, malt-heavy and boasts a toffee caramel sweetness and nutty finish. Match this against a warm, rich and meaty dish and the mix will knock your socks – or top hat – off.

  • 1.2 kg beef brisket
  • 50g smokey bbq sauce


  1. Pat brisket dry with paper towel.
  2. Season generously with your favourite dry rub or smokey bbq sauce, being sure to give the brisket a good massage
  3. Leave a marinade in the fridge for 4 hrs or overnight.
  4. Using a med/high temperature, char-grill the dry rubbed brisket on both sides until evenly charred and a nice crust is visible.
  5. Place into roasting tray & cover with aluminium foil.
  6. Place tray into a pre-heated oven at 95 degrees and leave to slow cook until core temperature reaches 90 degrees, this will take about 7-8 hrs. If you can’t wait 8hrs, 150 degrees for 3-4 hrs will also give a delicious result.
  7. Serve with your favourite starch and a fresh salad. We recommend serving your brisket with an eggplant puree & Amber Ale beer jus with beetroot slices as garnish.
