It’s a tough gig being a Head Brewer but someone has to do it! Ahead of International Beer Day on August 3, we sat down with The Charming Squire’s Head Brewer Allan Tilden, who definitely has one of the coolest jobs in the world.

  1. What is your role at The Charming Squire and how did you land a job so cool?

I was brewing at the Malt Shovel Brewery in Sydney and a job came up as a Brewer at the newly opened Eumundi Brewery and part of the job was looking after brewing at The Charming Squire as well. I guess you could say that I was just in the right place at the right time!

  1. What does a typical day look like in the life of Allan Tilden?

First thing and most importantly, is coffee. I love coffee almost as much as beer. After my dose of daily caffiene, the morning will be spent preparing an upcoming brew or transferring a brew ready for sale over the bar. On a normal brew day at The Charming Squire a brew will take about six hours. After the brew is done it’s cleaning time which is a huge part of all aspects of brewing. Then when it’s all done and dusted it’s time to sit down for a beer and relax!

  1. If you had to drink one James Squire beer for the rest of your life, which one would it be and why?

I would have to say the James Squire Jack of Spades Porter. It was the beer that got me into drinking dark beers many years ago and it still remains one of my favourites.

 

  1. If you had to pair that beer with one thing on the menu, what would it be and why?

Porter with chocolate is a perfect match so Porter and a nice chocolate dessert would be perfect. I hear the dark chocolate fondant is pretty good… And it is served with Jack of Spades porter ice cream!

  1. What beers do we have to look forward to at The Charming Squire? Can you give us any hints as to what might be hitting the taps soon?

The beers that will be released in the coming weeks will be a Cream Ale which is an original beer style from the US. Also pouring soon is an American Wheat Beer which will be very light and refreshing coming into spring.
