The Malt Shovel Mad Brewers are at it again! And the result - an imperial-style stout with a complex difference. “Noir” from the French language meaning Black is indicative of something both black and mysterious. And this mysterious complexity is what defines this special stout.

Brewed with pale chocolate, dark crystal barley malts and roasted black wheat malt, the wort is combined with Australian Super Pride hops and New Zealand Super Alpha hops. After boiling the high gravity wort for an extended period, powdered liquorice root is added to the kettle before pumping to the whirlpool.

Liquorice is the root of the plant Gycyrrhiza glabra, derived from the ancient Greek glukurrhiza, meaning ’sweet root’. It is being used increasingly in conventional and naturopathic medicine for the treatment of viral infections and ulcers. In traditional Chinese medicine, liquorice is commonly used in herbal formulae to harmonize the ingredients and carry the formula to the regular meridians.

Liquorice added to the kettle of a superb black stout adds a rich complexity to the satisfying hoppy finish. The Mad Brewers settled on liquorice as the unique ingredient to create that mysterious flavour enhancement. As one tastes Stout Noir, the various malts drive the black roasted barley/wheat flavours, but it is the liquorice that smooths out the rich finish.

Mad Brewers Stout Noir will be available in bottles in selected liquor stores nationally from 6th June, for a limited time only.  It will also be available on tap at the James Squire Brewbars and Brewhouses plus a number of selected bar accounts in each State/Territory.  Only 3,800 cases have been bottled so make sure you get some straight away.

Food matching suggestions: the rich warming flavours will match up nicely with a range of foods including, strongly flavoured meat dishes (e.g.. smoked venison), and similarly smoked cheese, and for a dessert delight try the Noir with a rich dark chocolate pudding.

    Encountered a few bottles of this at the local Dan Murphys. Had to try it and had to blog about it. FANTASTIC! Truly an all star beer.

    Came across this brew at the local bottle o today and thought i’d try a bottle ( i got into home brewing 6 months ago and have found i have new taste for beer. I love trying different brews.). I thought this stout was great, but found it a touch on the sweet side, only a touch though! Keep up the great work guys!!

    Tried this at Mt Buller whilst on holidays…. DELICIOUS… Now I only have to try and find it in central queensland… Dan Murphy’s doesn’t stock it and I have a taste desire now…. YUMMMMMMMMYYYYYYY

    Thoroughly enjoyed this brew so much the first time around in Canberra when only available on tap. We have been hanging out for a re-release of the product and found it at Dan Murphys in the Illawarra this week. We missed it so much. First mouthful was ‘OMG, it has been too long between drinks’. Would be good if Malt shovel could continue this awesome brew please ??????

    Stumbled on this lovely stout late in the season and have been chasing rumours of last cases ever since. No luck so far, but did manage to snaffle the final few bottles at the local. A couple of recently converted friends are on the same hunt. We all say PLEASE make more soon - it’s a stunner! Wonderful to know that Aussies are making beer this good…

    Discovered this on tap at my local pub in Melbourne in 2010 and got immediately hooked. Beautiful taste with a nice smooth finish. I’ve moved to rural SA now and have cleaned out - 12 bottles!!!! - the closest Dan Murphy’s in Mount Gambier. If you like stout, this is a must-have!

    same as every one else, found this superb mad brewers noir stout by chance . bought one bottle and went back and bought the rest on the shelf. best stout i have ever tasted , i have been drinking stout on and off for around 40 years and this is better than nectar of the gods . even better than sex! now that is saying something. BUT where can i get some in w.a, for xmas . please email me on outlets in perth w.a.. i live in geraldton and bought the last lot from liquor store in sunset in gero. hope i can get some . thanks for a great drink . bevan.

    This was a great addition to the range of beers currently offered. First tasted on tap and was in love, not the heavy road-tarrednesss of some stouts, and a palette more broad than a Renaissance painter, this beer went down very well every time. If you do not intend to release another batch, how about a home-brewers recipe ;)

    I was given a bottle of Noir for pulling a bloke out of a bog back in October long week end, I put it in the fridge the other week, after about 3 days I thought I’d try it, ….the best dame beer Ive ever tasted, I’ve never really been a stout drinker, some blacks - Toohey’s old etc. The quality and flavour of this beer was totally unexpected, I had never heard of the MAD brewers and am now entering the chase for more, … I’m begging you MAd brewers, Mr Squire, please re-release another batch and advise me of it

    Absolutely superb drop, especially in codler weather. Managed to find 3 bottles in a Sydney inner-west independent bottle shop last night, the last 3 they had! How happy am I!!
