I’ve always looked forward to winter; cold nights, hearty food, cosy rooms and call me old fashioned, but even rain. When choosing what to brew as a Mad Brewers Winter release, how could we pass up a warming stout, one with some real depth of flavour. Add to that a love of liquorice and you have this year’s treat. Not everyone likes liquorice but I am a fan, whether it be stand-alone liquorice, chocolate coated or subtle flavour in a red wine. Although liquorice flavours peep through naturally in stouts, we thought we’d boost it a bit, by way of a little liquorice root.
So, a blend of four malts and a reserved dose of liquorice root result in this complex, rich and silky brew. With each sip a multitude of flavours immerse the palate and then that unmistakable liquorice flavour creeps in late and lingers. It’s not shy so should be treated with respect and every sip savoured. I can just see myself sipping some by a fire in slippers and a woolly gown, but thankfully I’ll have to leave my lounge room to find it on tap somewhere. Winter is fun, and so is this limited release, an opportunity to indulge in winter’s pleasures.

I’m amazed that it’s taken a commercial brewer this long to advertise the addition of licorice for stout cos in home brew circles it’s been going on for years not just for flavour but a head improver.I’m looking forward to trying yours when it comes out and may add a bit more in my next batch. Once tried the addition of black jelly beans instead of sugar primer- an acquired taste- wont make it again! you know what we brewers needs is a mission impossible- the recipe for Guiness!

Just had a taste of the Stout Noir at the Norfolk Hotel in Fremantle…WOW it tastes great really impressed congrats on a fantastic brew.
They currently have 6 Dark beers on tap including Moo Broo Stout, Monteiths Winter Ale & JS Porter i tried all 6 and Stout Noir definately stands out as one of the best!!

It is about time you started to fulfil your potential….it is also great that you are combining your chemical engineering and wine making expertise in your brewing. I think the technical and practical background as well as the cross pollination of industries is something that the brewing world lacks. HEre is hoping that you can start to pave the way for some multi-dimensional brewers who are prepared to experiment as opposed to the card board cut out brewers we have at the moment that sell out to commercial needs and produce bland, unmemorable beer.

I tried the Noir Stout at one of the beer and food tastings at your Camperdown brewery and i love it.
I went to the “Local Tap House” in Darlinghurst today (29\8) to have another but, to my disapointment they dont have it yet.

We have spoken tot he Tap House and apprently Mad Brewers Noir Stout will be tapped for the weekend.
Congratulations Mad Brewers on another great brew, I love it!!
I was up in Brisbane last weekend and tried it at the very upmarket Norman Hotel (great with juicy steaks).
Will have to now check it out home here in Sydney, hopefully at the Marlborough Hotel Newtown.
I see no mention that it will be available in bottles?
Would love to be able to take some home and try it with the food matching suggestions.

This would’ve been even better during that cold snap back in June/July. You reckon if you do another Mad Brewers winter stout next year you could get it out in time for winter?
